3 ingredient Pumpkin cookies

My Lil sister Mere was here for Thanksgiving and she was raving about these three ingredient Pumpkin cookies that her roommates and her loved and make all the time. Jordan loves, loves, loves pumpkin cookies so I had to make em for him to try. Here is the easy recipe:

Ingredients:

1 box spice cake mix
1 16 oz can of pumpkin
Chocolate chips ( just eye it)

Directions:

Mix all the ingredients together and scoop out spoonful sized dough onto greased cookie sheet and bake at 350 degrees for 8-10 minutes. JORDAN LOVED THEM!!! So did I! TOtally a keeper recipe. My pic is bad,but the cookies were Fall and pumpkin heaven!

Chewy Brownie Cookies

Okay so these Cookies are like nothing you have ever tasted. They are so scrumptious and so easy to make. Cami has made them a few times for dessert for after Sunday dinners and I finally snagged the easy, easy recipe from her. I want to remember these. They taste like the chewy corners of the brownie pan.

Ingredients:

1 box brownie mix
1 egg
1 T. water
1/3 C. veg. oil

Directions:

Mix them all together and scoop out spoon sized balls in your hand and then flatten them a bit with your hand and place on the pan. Cook at 375 for 8-10 minutes ( or until soft and chewy).

Peanut butter and Nutella swirl cookies


I saw these puppies on Pinterest.com and I couldn't resist trying them. Two of my most favorite things together. P. butter and Nutella. You should have seen me while trying to make these. I had my fingers in the dough more times than I can count. YUM!


Peanut Butter & Nutella Swirl Cookies
Adapted from: Sweetest Kitchen

Ingredients

1/2 cup unsalted butter, softened
3/4 cup smooth peanut butter
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1/2 teaspoon vanilla extract
3/4 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cups all-purpose flour
Approx. 1/4 cup Nutella

Directions

Preheat oven to 350° F.

Combine butter, peanut butter, sugars, egg, and vanilla. Mix until well blended.

Add flour, baking soda and salt. Drizzle Nutella on top of the dough then swirl it through the dough with a butter knife.

Chill dough 15 minutes in the refrigerator. Roll into balls by hand. Place on parchment lined cookie sheet. Using a fork, press down the balls to flatten slightly. Bake until edges are very lightly browned (about 7 to 10 minutes).

Allow to rest 2 minutes on cookie sheet before transferring cookies to a cooling rack.

Cookie Icecream Sandwhiches



I loved these! I had the Elders over for dinner the other night and sometimes when they come to eat they have to leave quickly so I just hand them a dessert on their way out the door or send them home with goodies and these were perfect. I had free cookie dough that I scored from Papa Murphy's sitting in the fridge so I made that up into cookies and I had just bought some Dreyers vanilla icecream on sale at Walmart so I put the two together. Make sure to let your cookies cool and I softened up my icecream in the microwave for a bit so it would be soft when putting a scoop in between the two cookies. It worked magically and they were divine!

Chocolate Chip Cookies
Vanilla Icecream

Ohhhh. . . I wrapped them up in foil after making them and kept them in the freezer until we were done with dinner and then I just handed everybody a wrapped up cookie icecream sandwhich.

Chocolate Chip cookies

Bombalicious Chocolate Chip Cookies.
You will never need another Chocolate chip cookie recipe once you try these suckers. I will never make another CHocolate chip cookie than these. Use Ghiradelli chips. Snobby I know, but worth it!
2 sticks butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1-1/2 cup flour
2-1/2 cup blended oats( grinded up in the blender)
1 bag chocolate chips( Ghiradelli) (trust me)
Mix butter and sugars till just blended. Add eggs and vanilla. Then add dry ingredients. Bake for 9-10 min. @ 375*. Makes about 3 dozen. Enjoy!!!

MeeMaw's Kitchen Sink Christmas Cookies

I was home in Ca. and wanted to try one of Paula Deen's Christmas Cookies. I think this cookie was like eating HEAVEN. SO SO good! Wish I had a pic.
Ingredients

* 3 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon cream of tartar
* 3/4 teaspoon salt
* 1/2 pound (2 sticks) butter, softened
* 1 cup granulated sugar
* 1 cup lightly packed light brown sugar
* 1 cup vegetable oil
* 1 egg
* 1 teaspoon vanilla extract
* 1 cup puffed rice cereal
* 1 cup sweetened flaked coconut
* 1 cup rolled old-fashioned oats
* 1 (8-ounce) package toffee bits
* White chocolate, for dipping
* 15 peppermint hard candies, crushed, for garnish

Directions

Preheat the oven to 350 degrees F.

In a medium bowl, whisk together the flour, baking soda, cream of tartar, and salt.

Using an electric mixer, cream the butter and sugars. Scrape the sides of the mixer bowl and beat in the oil, egg, and vanilla until smooth. Beat in the flour mixture in 3 small additions, scraping the sides of the bowl after each one. Slowly beat in the rice cereal, coconut, and oats. Fold in the toffee bits and refrigerate the dough, covered, for 1 hour.

Drop rounded tablespoons of dough on 2 cookie sheets, leaving at least 1-inch of space around each drop. Bake until the cookies are golden around the edges, 12 to 14 minutes. Transfer the cookies to wire racks to cool.

Using a double boiler, melt the white chocolate. Dip the cookies into the white chocolate and sprinkle crushed peppermint to decorate. Allow to cool or serve warm. Store in an airtight container at room temperature.

P Butter, Chocolate Chip, and Oatmeal Cookies

I made these for my inlaws that came to visit. We loved em! I of course left some at home for us to chow down and Boy did we ever!
Ingredients

1/2 cup butter, softened
3/4 cup brown sugar
3/4 cup white sugar
3/4 cup peanut butter
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup rolled oats
1 cup semisweet chocolate chips

Directions



1. Preheat the oven to 375 degrees F (190 degrees C).

2. In a large bowl, cream together the butter, brown sugar, white sugar and peanut butter until smooth. Beat in the egg and vanilla. Combine the flour, baking soda and salt; stir into the peanut butter mixture. Finally, mix in the oats and chocolate chips. Drop by rounded spoonfuls onto ungreased cookie sheets.

3. Bake for 8 minutes in the preheated oven, or until edges are golden. Remove from cookie sheets to cool on wire racks.

Notes:

I baked these cookies and followed the recipe exactly. (about 9 minutes baking time) They don’t spread very much so you can fit quite a few on one baking sheet. These cookies also come out of the oven very soft, so be sure to let them cool on the sheet for several minutes before attempting to remove or they’ll just crumble and fall apart. So good!

Girl Scout Somoa Cookie Bars


These taste seriously like the Girl Scout cookies. I made them yesterday ( Sunday is always a free diet day). They were so yummy. Glad I left most of them over and Mike and Cams or else I would have been eating them all day today. I got the recipe off of www.getoffyourbuttandbake.blogspot.com. Here is the recipe:



Cookie Base

1/2 cup sugar
3/4 cup butter, softened
1 large egg
1/2 tsp vanilla extract
2 cups all purpose flour
1/4 tsp salt

DIRECTIONS:

First, make the crust.Preheat oven to 350F. Lightly grease a 9×13-inch baking pan, or line with parchment paper. In a large bowl, cream together sugar and butter, until fluffy. Beat in egg and vanilla extract. Working at a low speed, gradually beat in flour and salt until mixture is crumbly, like wet sand. The dough does not need to come together. Pour crumbly dough into prepapred pan and press into an even layer. Bake for 20-25 minutes, until base is set and edges are lightly browned. Cool completely on a wire rack before topping.

3 cups shredded coconut (sweetened or unsweetened)
12-oz good-quality chewy caramels
1/4 tsp salt
3 tbsp milk
10 oz. dark or semisweet chocolate (chocolate chips are ok)

DIRECTIONS:
Preheat oven to 300. Spread coconut evenly on a parchment-lined baking sheet (preferably one with sides) and toast 20 minutes, stirring every 5 minutes, until coconut is golden. Cool on baking sheet, stirring occasionally. Set aside.
Unwrap the caramels and place in a large microwave-safe bowl with milk and salt. Cook on high for 3-4 minutes, stopping to stir a few times to help the caramel melt. When smooth, fold in toasted coconut with a spatula. Put dollops of the topping all over the shortbread base. Using a spatula, spread topping into an even layer. Let topping set until cooled. When cooled, cut into 30 bars with a large knife or a pizza cutter (it’s easy to get it through the topping).
Once bars are cut, melt chocolate in a small bowl. Heat on high in the microwave in 45 second intervals, stirring thoroughly to prevent scorching. Dip the base of each bar into the chocolate and place on a clean piece of parchment or wax paper. Transfer all remaining chocolate (or melt a bit of additional chocolate, if necessary) into a piping bag or a ziploc bag with the corner snipped off and drizzle bars with chocolate to finish. Let chocolate set completely before storing in an airtight container.

Mama Glenn's PB cookies


Every once in a while Jage will request something that his Mom used to make and I call or email Mama Glenn and get the recipe. We have been trying to eat healthier lately and the meals have been pretty boring. . . Chicken and salad, chicken and veggies, chicken and blah blah blah you get the idea. Today I felt like making cookies though. Not for mutual and not for another family, but just to put in our cookie jar and enjoy. I decided on Mama Glenns delicious Peanut Butter Cookies!

Ingredients:
1 C. shortening
1 C. brown Sugar
1 C. gran. white sugar
2 eggs
1 C. peanut butter
3 C. flour
2 tsp. baking soda
1 tsp. salt
1 tsp. vanilla

Directions:
Cream the shortening and then add the sugars one at a time. Beat in the eggs one at a time. Add the p. butter and the vanilla. Sift the flour, salt, and b. powder. Roll into balls and push a fork down onto them and cook at a 375 degree oven for 10 minutes. You won't need another P.Butter cookie recipe again.
