Comfort Casserole



This is my Moms Chicken, mushroom casserole that we all ask for at home. With it being chilly outside lately this is the perfect yummy comfort dinner.

Ingredients:
3 chicken breasts
1 can cream of mushroom soup
3/4 C. sour cream
1/2 lb sliced mushrooms
1/4 stick of butter
1 pkg. long grain rice o roni ( wild rice)
1/2 C white onion
1/4 C. chopped celery
1/2 C. sherry
3/4 tsp. salt

Directions:
Boil the chicken, onion, sherry and celery until cooked. Combine the cream of chicken soup and sour cream together in a seperate bowl. Saute the mushrooms on a skillet with the butter and set aside. Cut up the chicken and use the water to cook the rice. I drain the rest of the water and scoop out the celery and onion and add it to my COC and sour cream mixture. After the rice is cooked combine everything with the bowl with the sour cream mixture and mix up. Pour it all into a 9 by 13 dish and cook for 30 minutes at 350 degrees. Ohhh make sure you pour in all the butter that was with the mushrooms into the casserole as well. Enjoy!
