Cous Cous, Chicken, and Black bean Salsa


Yummy!

Ingredients:
*Cous Cous from the box. Just follow directions. If you aren't familiar with Cous Cous it is a Wheat Moroccan Style Pasta. It basically tastes like pasta cut up into tiny pieces and a bit like rice. So good!
*Chicken breasts ( for my family usually 2-3 pieces)
*2 T. Olive Oil
*S&P

Salsa:
*1 can black beans drained
*1 can whole kernal corn drained
*3 Roma tomatoes chopped up
*1/4 C. cilantro chopped up
*1/4 C. red onion chopped up
*1 Avocado cut into small pieces
*1/2 C. italian dressing
Add all the ingredients for the salsa together in a medium size bowl and mix in really well. I really don't measure, but just eyeball it. If you like more tomatoes add more, if you like more onion add more.

I plate the Cous Cous, then add the cooked chicken I cooked in a frying pan with the olive oil and S&P. Top it all off with the yummy black bean salsa. Delicious!
