Veggie Sand. ( or add chicken to it too)



My Girl Jo invited us over for dinner the other night and made a yummy veggie sandwhich on a sourdough loaf and we loved it. Here is the recipe. We have had this meal a couple times since.

Ingredients:
yellow squash (2)
Zucchini (1 or 2)
1/2 white onion sliced thin
olive oil
Chicken (1-2 chicken breasts)
1/2 jar sun dried tomatoes
Fetta cheese ( fetta with sun dried tomatoes preferably)
3-4 T. mayonaise
1 lemon
1 tsp. minced garlic
1 thin sourdough baguette

Directions:
Slice up all the veggies and lay them flat onto a cookie sheet and drizzle with olive oil and salt and pepper. Place them aside.

Mix the mayo, squeeze half the lemon in the mayo and mix in the garlic. Slather on the sliced bread and then sprinkle the fetta all over. I used only about half the fetta cheese box. Set aside on another cookie sheet.

In a pan cook up your chicken and slice it thin. When the chicken is about half way cooked pour in the yummy sun dried tomatoes to cook the rest of the time with the chicken. Also put in your veggies on broil for bout 10 minutes or until they are light brown and softened.

After the veggies are done place your bread in the oven on broil and watch for it to get light brown. When it is done layer everything up on the bread and cut in slices and serve. So delicious!
