Monterey Chicken

I got this recipe off of www.getoffyourbuttandbake.blogspot.com. I refer to this site a lot when I am struggling to cook something for dinner. My sister, Cam and I have both found this recipe pretty incredible.


Ingredients:
4-6 boneless, skinless chicken breasts
Your favorite BBQ sauce
Balsamic vinagrette dressing or Italian dressing
½ cup chopped green onion (opt)
3-4 roma tomatoes chopped (opt)
½ pkg of bacon cooked until crisp
Colby-jack cheese shredded
Directions:
Beat chicken breasts until ½ inch thick and place in 13x9 baking dish. Pour a bit of balsamic vinagrette dressing over the breasts until covered. Cover with some saran wrap and marinate overnight or for several hours. Grill chicken breasts, or dredge in a bit of flour, and brown until golden, and tender. Place chicken breasts on a baking pan. Baste with bbq sauce. Cover each of the breasts with bacon and tomatoes. Cover each of the breasts with cheese. Sprinkle with green onions on top. Bake at 350 until cheese is melted through.
