Cafe Rio Pork Salad

Café Rio Pork Salad
1 small pork roast without the bone. You can buy one with the bone, but you just have to cut around it.
1 can coke
1/2 cup brown sugar
1 small jar of you favorite salsa( get a pasty kind)

In a large crock pot place the roast in with half water filled up. Cook on high for 4 hours. After 4 hours drain the water in the crockpot and place the rest of the ingredients in and cook for another 3 hours. The last half an hour shred the pork with two forks.

Rice:
White long grain rice ( just follow the directions to cook rice on the back). Add juice from 3 limes into the rice before cooking along with a bunch of cilantro chopped up finely and 2 cloves of garlic. Cook the rice like normal with all of that in the rice. I just use a rice cooker and it is super easy.

Ranch Cilantro dressing:
1 packet Ranch dressing
1/2 cup Mayo
1/2 cup Buttermilk
1 bunch cilantro
add as much crushed red pepper as you like!
Put all of this into the blender and blend away. I would suggest making this first and keeping it in the fridge while everything else cooks

To Serve:
Lay a flour tortilla down on the plate, add black beans, place the pork on top of that, add the rice on top of that. Layer with a good amount of fresh green lettuce, cheese, quacamole, and tortilla strips. Smother with your dressing!

It is a perfect meal for a big group, because it makes a lot of meat. I think everyone needs this recipe in their cookbook. So yummy! My mouth is watering right now. If you don't have Cafe Rio close, just make it!
