Mini Fiesta Meatloafs



I was at the Zoo with my lil sister and I'm always curious what other Mom's make for dinner and I usually always ask her what she is making and she told me she made these yummy mini meatloafs the other night and they were a hit so I had to try em. I had some left over hamburger meat so I went for it. I didn't even have to go to the grocery store to get stuff. I love that! She said she got the recipe off of Kraft.com, but just told me what was in the recipe and I tried to remember. Here it goes

Ingredients:
1 lb hamburger meat
1 C. salsa
12 saltines crushed up
1 egg
Chedder cheese

Directions:
Combine all the ingredients except the cheese together in a big bowl until mixed all together. Use a muffin or cupcake pan and place a large scoop of the meat mixture into each place. I then sprinkled cheese on top and placed in the oven at 350 degrees for a good 30-35 minutes. I wasn't sure of the exact time, but just watch em. They were super yummy! We put a bit of sour cream on top and really enjoyed em. It is like making meat muffins, but instead you make mini meatloafs

  1. our mini meat loafs are in the oven right now! the boys are excited (soon to be disappointed that they aren't actually muffins) they sure smell delicious!
