Spring Chicken that you can't get enough of!


We wanted MORE!

YOU WILL NEED:

1 (5 oz.) pkg. chopped broccoli
2 green onions, minced (opt)
2 boneless, skinless Chicken Breasts
1/2 Cup soft or dry bread crumbs
1/2 tsp. paprika
1 Tbsp. flour
1/4 tsp. pepper
1 Cup Monterey Jack Cheese
2 thin ham slices
1 Tbsp. parsley, chopped
Butter
1/4 tsp. salt
1 Cup Milk

DIRECTIONS:
Combine broccoli, onions, and 1/2 cup shredded cheese. Pound each breast to 1/4 inch thickness. Top with a piece of ham and broccoli mixture (tablespoon each). Fold each breast over filling; tuck ends under. Brush with melted butter. Coat with a mixture of the crumbs, parsley, and paprika. *I melt a couple Tablespoons of butter in the bottom of a glass 9x13 dish, then place the chicken bundles on top of the butter. Roll them half way through the baking time, so that they brown well on both sides. Bake at 375 degrees for 45 minutes. Serve with Cheese Sauce.

CHEESE SAUCE:
Melt 2 Tablespoons butter; add flour, salt, and pepper. Cook 30 seconds, then slowly whisk in milk; cook until thick, then add remaining cheese. Serve over the chicken.
