Moms chicken cheese Casserole


This is by far a family favorite. It is so simple and yet so yummy to my tummy.

Ingredients:
1/2 package corn tortillas cut up into pizza pieces
1 med. sized jar of your favorite salsa
1 can cream of chicken soup
Chedder Cheese ( just eye it) ( lots though)
4-5 pieces chicken cooked and cut into small bite sized pieces

Directions:
I take the stack of corn tortillas and cut through all of them and cut them into pieces like pizza slices. I then layer the bottom of the rectangular casserole dish with some of the corn tortillas ( just one layer). In a small bowl mix the salsa and C of chicken soup. I then layer the salsa mixture on top of the corn tortillas. I then take some of the chicken and layer on top of the salsa mixture and then layer with chedder cheese. I do this layering about 3-4 times and then end with shredded cheese on top. My Mom thinks the recipe is best if you make it the night before and leave it in the fridge, but I usually just make it and bake it on 350 degrees for about 30 minutes. Kids love this and so do Moms and Dads!

This one looks especially tasty and easy- my mom actually makes something similar.... num nums! I just made the pepper jack steak sandwiches 2 nights ago and they turned out fab!! Thanks girl!!!

  2. Thanks for saving my Sunday!! I had a youth sacrament this morning so I got home earlier than the boys - thought I'd find something new to make. I've been trying to use up all the food in my fridge before it goes bad - had the salsa, chicken but only flour tortillas and a can of cream of cheddar soup! Oh no! Its in the oven and smells good, so we'll see how it comes out. Your food is so yummy - we'll be making a lot of your receipes this summer for sure. Dying to try the honey chicken mango salad.
